Malpuri is the Mangalorean version of popular Indian sweet pancake Malpua.It’s easy to make and takes less ingredients compared to Malpua.Here comes the recipe.
For batter :
All purpose flour – 1 cup
curd -1/2 cup
water -1/2 cup
saffron -1/2 tsp
For sugar syrup:
Sugar -1.5 cups
water – 1 cup
lime juice-1 tbsp
saffron – 1/2 tsp
cardamom powder -1/2 tsp
Ghee – 1/2 cup
Method with step by step photos:
1.In a bowl take 1 cup of maida or all purpose flour.
2.Add 1/2 cup of curd to it.
3.mix curd and flour before adding water.
4.Add 1/2 cup of water,adding little at a time and mixing it well.
5.The batter consistency should be slightly thick similar to that of Idli batter.
6.Keep aside the batter for fermentation for 5 to 6 hours.After 5 to 6 hours start the procedure by preparing a sugar syrup.Take 1.5 cups of sugar in a wok or pan.
7.Add 1 cup of water to the pan.
8.Start boiling the sugar syrup in medium flame.Keep stirring the syrup occasionally. 9.Boil the sugar syrup until it reaches single thread consistency.
10.Once the syrup reaches single thread consistency,add 1 tbsp of lime juice and stir it quickly.Lime juice will prevent sugar from crystallizing. 11.Also add 1/2 tsp of saffron to the syrup. 12.Further add 1/2 tsp of cardamom powder. 13.Stir the syrup and turn off the flame.Keep aside the prepared sugar syrup. 14.Next take the fermented batter.Lets start making malpuri’s. 15.Add about 1/2 tsp of saffron to the fermented batter.This will add a nice flavor and texture to the malpuri’s.However adding saffron is optional.16.Give a good mix to the batter for about 5 minutes.
17.Next for making malpuri’s heat up 1/2 cup ghee in a pan in low flame. 18.Take about 5 to 6 tbsps of batter and spread it in the ghee slowly giving it a poori shape as shown in the picture below. 19.Fry the malpuri in LOW FLAME on both sides and remove from ghee. 20.Drop the fried and hot malpuri’s directly in the sugar syrup. 21.Allow the malpuri to soak in sugar syrup only for about 5 minutes and then remove from the syrup.
22.And our hot and sweet pancakes Mangalorean malpua or Malpuri’s are ready to plate 🙂 23.Garnish them with some finely chopped cashew nuts or almonds. 24.Serve them hot and Enjoy 🙂 !!
