Onion chutney recipe

Onion chutneyMost of the South Indian dishes ,especially breakfast is incomplete without a chutney to serve along with.There are many types of chutneys : coconut chutney,garlic chutney,coriander chutney,ginger chutney,onion chutney,tomato chutney…well..the list goes on.Today,I am going to present the recipe for onion chutney.A chutney that goes well with any types of dosa,idly or even rice.There 3 variations of onion chutney that I usually make.This is one among those 3 recipes.Hoping to upload 2 more recipes of onion chutney soon πŸ™‚ .. So,here comes the recipe.

Ingredients required:
oil - 1 tbsp
mustard seeds - 1/2 tsp
asafoetida - a pinch
fenugreek seeds - a pinch
dry red chillies - 7 to 8
tomato - 1 
onions - 3 
cashew nuts - 3 tbsp
salt - as per taste
For tempering : mustard seeds,broken dry red chilli and curry leaves.

Method: 
* In a pan,heat up 1 tbsp of oil.
* Add 1/2 tsp of mustard seeds and once they start spluttering add
  a pinch of asafoetida.
* Also add a pinch of (less than 1/4th tsp) methi seeds(fenugreek).
* Next add dry red chillies and fry for 2 minutes.
* Remove seeds from 1 medium sized tomato and chop the tomato.Add chopped 
  tomato slices to pan for frying.
* And now add 3 medium sized and chopped onions and stir fry again.
* Fry the onions until they turn pink in color and then add 2 tbsps of
  cashew nuts.
* Turn off the flame and allow the fried ingredients to cool and then add
  required amount of salt and grind the ingredients without adding water.
* And our onion chutney will be ready to serve.Serve it with any dosa of 
  your choice and enjoy :)
