Rajasthani thali | North Indian thali | Indian lunch menu ideas with step by step photos:
After Udupi style South Indian thali, and a mini Punjabi thali I was wondering whether I should try one more north Indian thali or not. There were many thali ideas on my list : Gujrati thali,Rajasthani thali,Kashmiri thali and other South Indian thali’s.But looking at the varieties of dishes served,it was Rajasthani thali that captured my attention and I finally decided to do one.I started at 9:30 in the morning and thali preparation went on till 3’o clock in the afternoon 🙂 .It was worth the effort when I see the final thali picture.
It was a wonderful, delicious and restaurant style Rajasthani thali 🙂
Lehsun Ki chutney :
First I started with lehsun ki chutney.Suddenly I remembered the coconut chutney that I had made for Maharashtrian thali 🙂 .The tradition remains the same .. whether it is south India,North or any other regions.I wanted to try an authentic Rajasthani style lehsun ki chutney. The best part is that this lehsun ki chutney can be stored at room temperature in an air tight jar.The quantity that I prepared went on for 4 days :).Click here for lehsun ki chutney recipe:LEHSUN KI CHUTNEY.
After a spicy lehsun ki chutney I included green chutney along with spicy aloo samosa in the thali. This was done on special request from my daughter 🙂 .
Dal Baati Churma:
How can we skip dal baati churma in a rajasthani thali ? It is the essence of any Rajasthani thali meal.I had already posted the recipe for dal.But to make it more of rajasthani style we can also add black grams along with usual dals we add.Click here for DAL RECIPE.
I never knew baati was that easy to make. All it needs is a check on right timings while baking the baatis.Typically baatis are made in a gas tandoor, but since I did not have a tandoor I baked it in microwave convection mode and it was a perfect rajasthani style baati’s that are served in any good restaurants :).Once the baati’s are ready,we can make churma instantly with the same baked baati’s.Click here for video recipe of BAATI CHURMA .Hopefully,I will be able to adjust my schedules and post the text recipe soon 🙂
Jeera Rice Recipe:
No introduction is required here 🙂 .But yes, instead of Jeera rice we can also serve a flavorful ghee rice in a Rajasthani thali.I had posted jeera rice recipe while posting Punjabi thali.Click here for JEERA RICE RECIPE.
Besan ki Sabji:
Besan ki sabji is very popular in Rajasthan. And a rajasthani thali usually has either a besan ki sabji or rajasthani kadhi.Considering the time required for preparation,I had to choose besan ki sabji.Click here for BESAN KI SABJI RECIPE.
To accompany the roti’s or phulka there must be a rich and creamy gravy. And I wanted to add a paneer dish in the thali so made kadai paneer for roti’s.Click here for KADAI PANEER RECIPE.
We all know how to make phulkas or roti. But ever tried making aloo phulka ? They are more tasty and softer compared to the normal phulka’s.I had uploaded a video recipe on aloo phulka long back.Click here for ALOO PHULKA RECIPE.
Moong dal halwa:
Moong dal halwa was originated from Rajasthan but it is so popular all over India, that we hardly bother about where it is originated from. But I feel every region should be given the due credit for introducing such wonderful recipes.I remember someone commenting on my youtube channel : “Unity in diversity” which is true as far as Indian cuisine is considered 🙂 .Again considering the time of preparation,I choose to make an instant moong dal halwa instead of soaking moong dal for 4 to 5 hours.Click here for MOONG DAL HALWA RECIPE.
And this how the final product looked like 😀
